Low Fiber Protein Pepper Soup

Ingredients:

  • 16 oz Organic Chicken Broth
  • 16 oz Water
  • Handful Penne Pasta
  • 1 Poblano Chili Pepper
  • 1 Egg
  • Oregano, Parsley
Low Fiber Protein Pepper Soup
Recently diagnosed with colitis and told by my physician to eat a low fiber diet until symptoms pass, I downloaded Serovera’s 7-page booklet defining which foods are classified as low fiber for digestive disorders including Crohn’s disease, colitis, and diverticulitis. 1.  Remove chili pepper seeds and stem.  Cut or break into pieces.  Combine with broth and water and bring to boil.

2.  Add 1 tablespoon of each oregano and parsley flakes to boiling base.

3.  Add pasta.  Continue to boil for 4 to 5 minutes.

4.  Add egg and stir rapidly making sure to break up the egg.  Reduce heat, simmer for 2 minutes, remove and serve.

Quite tasty considering it is a low fiber diet.
